Stuffed French Toast

6 slices bread
4 eggs
1/2 cup milk
1/2 tsp cinnamon
1 cup cream cheese
1/2 cup frozen blueberries, thawed and drained
1 tsp lemon zest
1 1/2 cups icing sugar, sifted
1 tbsp cornstarch
1/4 cup butter

In a mixing bowl, whisk together eggs, milk and cinnamon; set aside. In another bowl, beat together cream cheese, berries, zest, sugar and cornstarch. Spread cheese mixture evenly onto 3 slices of bread (about 1/4" thick), leaving about 1/4" frame of bread bare, all the way around. Top with another slice of bread, pressing down a little so it sticks together like a sandwich. Melt butter in a frying pan over medium-high heat. Once the butter is hot, dip the "sandwiches" in the egg mixture, turning a few times to coat and so that a little soaks in. Fry the bread until it's dark golden brown on both sides and heated all the way through. Serve hot with maple syrup. Yield: 3 servings
