Huevos Rancheros
1 1/2 cups onion, diced
2 tsp garlic, minced
1 1/2 tsp ground cumin
1/4 tsp cayenne pepper
1 tsp dried jalapenos/chili flakes
1/2 tsp salt
1 cup bell pepper, diced
1 1/2 cups diced tomatoes
4 breakfast sausages, fried and
sliced diagonally
3/4 cup chicken stock
4 eggs
1 cup queso fresco or feta cheese, crumbled
1 cup refried beans, heated
4 flour tortillas
Preheat oven to 375F. In a cast iron pan over medium-high heat, add oil, onion, garlic, spices and salt. Sauté until onion starts to soften. Add bell pepper, tomatoes and sausages. Saute until juices are reduced. Add the chicken stock, stir and reduce by half. Using a spoon, make four small wells in the mixture and crack an egg into each one. Sprinkle everything with cheese and place in the oven. Cook until egg whites are set and yolks are just starting to set (10-15 min.). Spoon 1/4 cup of refried beans on each warm tortilla and top with 1/4 of the egg mixture. Yield: 4 servings
