Hot Wings
3/4 cup buttermilk
6 eggs
1/2 cup flour
1/2 cup cornstarch
1 tsp salt
1 tsp black pepper
1 tsp hot paprika
2 cups flour
1/2 cup sriracha
1/2 cup honey
Preheat deep fryer to 325F. Whisk the buttermilk and eggs together thoroughly. In another bowl, sift together the 1/2 cup flour, cornstarch, salt, pepper and paprika (this is the breading). Dredge the wings in the 2 cups flour, shaking off excess. Dip in the egg wash, then dredge in the breading mixture. Fry until the wings are an internal temperature of 16°F. (They should be a nice golden brown, with clear juices inside - not pink.). Whisk together the sriracha and honey to use as dipping sauce, or to toss your cooked wings in. Yield: 4 servings
