Pumpernickel Bread

Difficulty: easy Prep Time: More than 15 Minutes Total Time: More than 1 hour
1 tbsp dark cocoa powder
1/2 tsp instant coffee
2 tbsp caraway seeds
1 cup all-purpose flour
3/4 cup whole wheat flour
1 1/4 cup rye flour
3 tbsp sugar
1 tsp salt
1/3 cup cornmeal
1 tbsp instant yeast
1 cup warm water
1/2 cup warm milk
2 tbsp melted butter
1/3 cup molasses

Mix together dry ingredients. Mix together liquids and add to dry. Mix and knead until smooth and elastic (add more flour if it’s too sticky). Place in a lightly oiled bowl, cover with plastic wrap and allow to rise until doubled (an hour or even two). Punch down dough and shape into a loaf. Cover and allow to rise until doubled (about an hour or two). Place on a greased or lined sheet pan and bake at 350°F for 45 minutes, or until hollow sounding when knocked on the bottom. Remove from pan and cool completely on a wire rack.Makes 1 loaf.
