Rye Bread
1/2 cup whole wheat flour
2 cups all-purpose flour
2 tbsp caraway seeds
1/3 cup Demerara sugar
3 tsp salt
2 tsp instant yeast
1 3/4 cup warm water
1/3 cup fancy molasses
2 tbsp melted butter
Mix together dry ingredients. Mix together liquids and add to dry. Mix and knead until smooth and elastic. Place in a lightly oiled bowl, cover with plastic wrap and allow to rise until doubled (about an hour). Punch down and halve the dough. Shape each half into an oval loaf and place on a parchment-lined sheet pan. Cover with a clean tea towel and allow to rise until doubled (about an hour). Bake at 350°F for 30-40 minutes, or until golden brown and hollow sounding when knocked on the bottom. Remove from pan and cool on a wire rack.Makes 2 loaves.
