Sweet Potato Muffins
1/4 cup applesauce, unsweetened
2 eggs, lightly beaten
1/2 tsp vanilla extract
1/2 tsp almond extract
1/2 cup honey
1/2 cup yogurt
2 cups whole wheat flour
1 tsp baking soda
1 tsp cinnamon, ground
1/4 tsp nutmeg, ground
1/2 tsp allspice, ground
Preheat oven to 350°F and line muffin tins with paper liners. Peel and cut sweet potato into cubes and boil until tender; drain well. Mash together with applesauce. Whisk together the eggs, extracts, honey and yogurt. Add to sweet potato mixture and blend together. In a separate bowl, sift together the flour, baking soda and spices. Add the wet ingredients and mix just until moistened (lumps are okay). Fill muffin cups no more than 2/3 full. Bake 15-20 minutes, or until a toothpick inserted in the centre comes out clean.
