Oatmeal Raisin & Chocolate Chip Cookies

Difficulty: easy Prep Time: Ten Minutes Total Time: Under an hour
1 cup all-purpose flour
1 tsp baking powder
1/2 tsp baking soda
1/2 tsp cinnamon, ground
2 tbsp margarine, softened
1/2 cup white sugar
1/2 cup brown sugar
1 egg
1/4 cup apple sauce, unsweetened
1/2 tsp vanilla extract
2 cups quick-cooking oats
1/2 cup raisins
1/2 cup chocolate chips (dark)

Sift together flour, baking powder, baking soda, salt and cinnamon. Separately, cream together margarine and sugars. Beat in the egg, scrape down the bowl and beat in applesauce and vanilla extract. Using a wooden spoon, stir in the flour mixture and the oats until just combined and no dry spots of flour remain. Fold in the raisins and chocolate chips, and drop by the tablespoonful onto parchment-lined cookie sheet and bake in 350°F oven for about 10-12 min. Cookies will be light brown at the edges when done. Let cool on sheet for 3-5 min., and then transfer to a wire rack to cool completely.
