Poached Eggs with Ham and Veggie Hash

2 tsp vegetable oil
1/4 lb smoked ham
1 potato peeled and diced
1 small onion
1/4 cup chicken or vegetable stock
1/4 tsp hot pepper sauce
1/2 green pepper, diced
1/2 cup corn kernels
1 small tomato (diced)
2 eggs
Parsley to garnish

In 7 inch skillet, heat oil over medium heat. Add ham, potato, and onion, stirring often and cook for three minutes. Add stock and hot sauce. Cover and cook over medium heat until potatoes are almost tender. Add green pepper, corn and tomato. Make 2 nests in mixture, crack one egg into each nest. Cook covered for 5 minutes or until eggs are set. Garnish with parsley and serve.
