Cod au Gratin

1 lb fresh cod, cooked and flaked
½ cup butter
1 large onion, diced
6 large stalks of celery, sliced
1 tbsp black pepper
1 tbsp savoury
1 tbsp fish base (if unavailable, substitute with 1 tbsp salt)
½ cup flour
3 cups milk
1 cup shredded cheddar cheese
½ cup breadcrumbs
½ cup butter
1 large onion, diced
6 large stalks of celery, sliced

1 tbsp savoury
1 tbsp fish base (if unavailable, substitute with 1 tbsp salt)
½ cup flour
3 cups milk
1 cup shredded cheddar cheese
½ cup breadcrumbs
Sauté onion and celery in butter with pepper, savoury and fish base (or salt). Add flour and mix till combined; add milk and whisk together. Continue cooking over medium heat till thickened. (You may need a little more milk if it seems too thick.) Gently stir in flakes of cod, then pour everything into casserole dish. Sprinkle with cheese and breadcrumbs. Bake at 350°F till browned (about 10 min.). Serves 6.
