Flipper pie
1 qt water
1 tsp baking soda
1 tsp salt
1 cup flour
1/2 cup fat pork
2 onions, chopped
1/4 cup flour
1 cup cold water
1 tsp Worcestershire sauce
Pastry ingredients:
1 1/2 cups flour
1/3 cup shortening or butter
1/2 tsp salt
Cold water
Soak flippers in water and baking soda for 1/2 hour. Trim off excess fat. Add salt to flour and dip flippers in flour mixture. Pan fry in fat pork to brown. Add chopped onions. Transfer all to roasting pan. Make a gravy of flour, water and Worcestershire sauce. Pour over flippers. Cover and bake in 350°F oven until tender, approximately 2-3 hours. To make pastry, rub shortening into flour and salt. Add cold water to hold pastry together. Roll out and place over flippers. Bake at 400°F for last half hour.
