Intoxicated Moose

1 3-5lb moose roast
5 cloves minced garlic
2-3 tbsp olive oil
1/4 cup chopped parsley
4 cups (1 litre) red wine
1 tsp whole black peppercorns
1/2 tsp salt
2 tbsp butter
2 tbsp flour

Heat oil in a dutch oven. Sear the meat on all sides to brown. Add the garlic, peppercorns, parsley, wine, salt. Reduce to low heat, and simmer, covered for 3 hours. Remove meat after 3 hours; cover to keep warm. Bring stock to boil to reduce its volume. Strain. Heat the butter in a small saucepan, add the flour - cook for 2 minutes. Pour in the stock and simmer until thickened. Carve the moose and serve with sauce.
