Mincemeat Pie
Filling:
1/2 lb ground beef
3/4 cup beef suet
1 cup raisins
1/2 cup golden raisins
3/4 cup currants
2 granny smith apples, peeled and grated
1 1/4 cups dark brown sugar
1/4 cup sliced almonds, chopped roughly
3/4 cup candied citron/peel
1 lime (zest and juice)
3 tbsp apple cider vinegar
2 tsp cinnamon, ground
1/2 tsp nutmeg, ground
1/4 tsp cardamom, ground
1/4 tsp cloves, ground
1/4 tsp ginger, ground
1/4 tsp mace, ground
1/4 tsp allspice, ground
1/4 cup dark rum
Preheat oven to 350°F and bake the shells for 15-20 minutes, until they’re golden brown. Remove from oven and let cool.
Mix all filling ingredients (except rum) thoroughly in a saucepan and cook over medium heat. Stir often so the beef doesn’t clump together. Once beef is cooked through, there is no liquid left and the mixture becomes very “jam-like,†remove it from heat. Stir in rum and set aside to cool a little. Fill the tarts and refrigerate any leftover filling for later use. Serve room temperature or warm.
Yield: 24 mini tarts or 1 pie
