Maple-Walnut Tarts

12 tart shells (3"), or 1 full pie crust
Filling:
1/4 cup butter, melted
1 cup brown sugar
1 cup maple syrup
1 tsp pure vanilla extract
4 eggs
1 1/2 cups walnut halves

Preheat oven to 350°F. Whisk all filling ingredients together thoroughly. Pour the mixture into the pie shell(s). Sprinkle walnuts over top and bake for about 30-40 minutes (the crust will be dark golden brown, the filling will start to puff a little and the centre will jiggle like half set Jell-O). Remove from oven and allow to cool entirely on a rack, then refrigerate for at least 4 hours – preferably overnight.
Yield: 12 tarts or 1 pie
