Baked Stuffed Rabbit
4 cups fine bread crumbs
2 tbsp chopped onion
1/4 cup soft butter
salt and pepper, to taste
2 tbsp savory
fat pork
Clean rabbit thoroughly. Combine bread crumbs, onion, butter, salt, pepper and savoury to make the dressing. Stuff the rabbit with dressing; sew the opening or fasten with skewers. Place in roasting pan and lay four or five slices of fat pork across its back. Add a little water and cover pan. Bake at 350°F until meat is tender (about 25-30 min. per pound). Remove from oven and thicken drippings for gravy. Top with your favourite pastry and return to oven. Bake at 450°F until pastry is nicely browned. Serve immediately.
