Partridgeberry Chutney
1 cup raisins
3 cups water
2 cups granulated white sugar
1 tbsp cinnamon
1 1/2 tsp ground ginger
1/4 tsp cloves
3 apples (pared, cored and chopped)
1 1/2 cups celery, chopped
2 med onions, chopped
1/2 tsp nutmeg
Put berries, raisins and water in large saucepan and cook for 20 to 25 minutes over medium heat. Mix together sugar, cinnamon, ground ginger and cloves; stir into berries and raisins. Add apples, celery and onion. Continue to cook for approximately 15 minutes on medium heat. Watch carefully to prevent burning and lower heat to simmer for another 10 minutes. Break berries as chutney cooks. Remove from heat and add nutmeg. Put into prepared serving jars and store Chutney for at least a week in order to allow flavours to develop. Freeze in small containers if desired.
