If you're making Sunday dinner (aka Jiggs), cut me out a plate please and thank you~



I LOVE Sunday dinner which is served around 12:00pm in Newfoundland-in Ontario dinner is referred to as lunch and supper is referred to as dinner, anyway, Jiggs dinner is my favorite meal of all! It's a pain in the you know what to cook as it can take more than 3 hours long but it tastes oh soooo good.



There is a technique to it tha's for sure and it took me over 20 years to get it down to almost perfect. All the vegetables (in order turnip, carrots, cabbage and potatoes-and parsnip if you like it) are cooked in a big tall boiling pot with salt meat and puddings. It's still debatable by some on whether to put the cabbage or potatoes in last though. I remember seeing one of my uncle's pot with four to six wedges of the cut cabbage at the very top (like the red caps in the Caps for Sale children's book). The puddings, whichever you're making for the meal-pea's pudding (always), blueberry, old fashioned raisin and molasses, rice with salt meat through it and poor man's duff (done on a saucer at the bottom of the big pot) are usually put in after the salt meat (that&a's hopefully soaked the night before) starts to boil. That's how I do it anyway and honestly I don't really think it matters all that much as it always taste good no matter how or in which order you cook it.



But oh the vegetables melt in your mouth-they have all the flavors of the other vegetables, salt meat and puddings all mixed in. It doesn't matter who's making it, it always tastes so good-too good in fact as you can have lots of leftovers. Leftovers can be fried up in butter the next day-which we call or used for cold plates for supper (aka mainland dinner), with usually jelly and custard for dessert.



I only cook Jiggs dinner three times a year now-Easter/Thanksgving/Christmas but I could eat it every Sunday like we had growing up (I didn't appreciate it then). When I visit home and someone invites me over for Jiggs dinner, I will never refuse as I can't resist it. All of my family down home make an excellent Jiggs Dinner and all I got to say is cut me out a plate please!
