As we are aware, this year Queen Elizabeth is celebrating seventy years of her Coronation. In honour of this special occasion, I'm happy to share a recipe our late mom used frequently over her many years - a delicious, yummy cake our family and guests thoroughly enjoyed. Indeed, her recipe was shared with all our family, and we made this tasty cake quite often, and she gave the recipe to many of her friends. Once made, your mouth will water for another one. After baking this cake, the ambrosial smell will entice you to taste even before cooling! Queen Elizabeth Cake Cake Mixture 1 cup raisins or dates 1 cup water 1/2 tsp baking soda 1/4 cup softened butter or shortening 1/2 cup packed brown sugar 1 egg 1/4 tsp vanilla 1 1/2 cups of flour 1 1/2 tsp baking powder 1/2 tsp salt Topping: 5 tbsp brown sugar 3 tbsp butter 2 tbsp milk 1/2 cup shredded coconut Boil raisins or dates with water. Let cool and add baking soda. Cream butter, sugar and egg. Add vanilla. Sift and combine flour, baking powder and salt. Combine all in a 9x9 greased loaf pan. Bake at 350 degrees for 30 to 35 minutes. In a saucepan, combine 5 tbsp brown sugar, 3 tbsp butter and 2 tbsp milk. Heat, stir and add 1/2 cup shredded coconut. When the cake is baked, put the oven on broil. Spread the topping mixture on the cake and return to the oven until browned. Use a cake rack to cool. Hope you will enjoy this delectable cake!
