"newfoundland is and always will be near and dear to my heart. like many of us away, i am always longing for the day when i return again. i grew up in a large family and of course the major happenings in a home like ours was the never ending kitchen activities and the continual hum of the washing machine. i had my share of chores but one of them was not cooking. sure i peeled my share of potatoes but never was i allow to help with the bread making or frying the many pans of fresh fish. no, simple tasks were given to me. so when i left newfoundland many years ago..(eek), i did not take with me any great cooking experiences. marrying a non-newfoundlande- r definitely didn't help me to maintain any sense of newfoundland traditional dishes. i have never prepared a jiggs dinner or made a batch of homemade bread. when i go to newfoundland i savour every dish i eat because i know i won't have those wonderful dishes while away. i usally don't take back any food with me because the truth is i never know what to do with it. fish/brewis has never been cooked in my house. this past trip to newfoundland i did bring back some fresh frozen cod. but, it was intended for my sister to use, because she makes a mean pot of fish stew. unfortunately, when i unthawed the fish, my sister was not available to take the fish and i was left with two wonderful bags of cod sitting on my kitchen counter. i felt so terrible debating about whether to throw it out or cook it. i tried to find my newfoundland cookbook and it was not to be found, i wonder why. so i pulled another cookbook out, a wonderful old cookbook put together by a local church. under the fish section i found a batter and decided, what the heck, give it a try. without even looking at the ingredients, i proceeded to gather the stuff needed. a mix and a stir, and a chopping of the cod, i was soon into it. i am not bragging, this fish was the best i have ever eaten. i had a big plate loaded down with this wonderful dish. battered, fried cod, i did it and i was pretty proud of myself. i took some to a friends house later and they loved it. my first exerience cooking a feed of cod. your never to old to learn something new. i will share the recipe with ya in the recipe section.."   Submitted By: NULL
