Tzatziki

Difficulty: easy Prep Time: Ten Minutes Total Time: More than 1 hour
1 (500 ml) tub Greek yogurt
1 cup English cucumber, finely grated
2 cloves garlic, grated
1 tsp lemon zest
1/2 tsp black pepper
1/2 tsp salt
2 tbsp fresh dill, minced
2 tbsp lemon juice

Mix everything together and refrigerate overnight (or at least 4 hours) to allow the flavours to fully develop. Serve as a spread for your favourite crackers or strips of toasted dark rye bread (a.k.a. soldiers). You can even use it as a sandwich spread or with fresh veggies for dipping! Yield: approx. 3 cups
