Turr Soup

1 tbsp vegetable oil
1 medium onion, diced
3/4 cup carrot, diced
3/4 cup celery, diced
3/4 cup turnip, diced
2 tsp garlic, minced
1 tsp fresh thyme leaves
2 bay leaves
8 cups chicken stock
1 whole turr, picked and cleaned
1 small can of diced tomatoes
1/2 cup rice, uncooked

1 tsp fresh thyme leaves
2 bay leaves
8 cups chicken stock
1 whole turr, picked and cleaned
1 small can of diced tomatoes
1/2 cup rice, uncooked
In large pot, sweat onion, carrot, celery, turnip, garlic, thyme and bay leaves in the oil until onions are translucent. Add stock. When stock starts to simmer, add whole bird. Simmer until the meat is cooked through (45-60 min.). Remove bird and pick carcass clean. Chop meat and add back to pot. Discard bones. Add tomatoes and simmer soup for about 30 minutes. Add rice and simmer until rice is cooked. Remove bay leaves and serve. Serves 6.
