Turkey Barley Soup

10 - 12 lb turkey carcass, plus giblets
8 cups water
2 tsp salt
1 clove garlic, roughly chopped
10 black peppercorns
1/2 cup chopped parsley
2 cups chopped onion
1/3 cup regular barley
Dash paprika
1 cup sliced carrots
1 cup sliced celery
1 (10 oz) pkg. frozen cut green beans
8 cups water
2 tsp salt

1/3 cup regular barley
Dash paprika
1 cup sliced carrots
1 cup sliced celery
1 (10 oz) pkg. frozen cut green beans
Place first seven ingredients in large soup kettle. Bring to boil, cover and simmer 45 min. Add barley; cover and continue cooking one hour. Remove carcass and giblets. Add paprika, carrots and celery. Cover and cook 10 min. Meanwhile, remove meat from bones and cut up the giblets, add to soup with green beans. Return to boil, cover and continue cooking 5 min. Skim off excess fat and serve.
