Taco Salad

Difficulty: easy Prep Time: Five Minutes Total Time: 30 Minutes or Less
2 cups romaine lettuce, shredded
1 fresh tomato, chopped
1/2 cup canned kidney beans, drained
1/2 cup salsa
1/2 cup cheddar cheese, shredded
1/2 cup sour cream
1 cup tortilla chips

In a medium plastic container, toss together lettuce and tomato. In a smaller container, stir together beans and salsa. Pack cheese and sour cream in separate containers. Pack tortilla chips in a resealable plastic bag. At lunchtime, kids can add bean mixture and sour cream to lettuce and tomato, and sprinkle with cheese. Crumble tortilla chips over top.
