Sweet Potato Mashgarita
4 cloves of garlic (roughly chopped)
2 tbsp butter
1 tbsp salt
2 tbsp pepper
Condiments:
Sour cream
Cheddar cheese (grated)
bacon bits
green onions (chopped)
Roughly chop the potatoes into large cubes and place in a pot of water. Bring to a boil then reduce heat. Add garlic. When the potato can be easily pierced with a knife remove contents from water and place in a large bowl. While potatoes and garlic are still hot add butter, salt and pepper. Mash contents with a potato masher (for a smoother consistency add some of the water from the pot).
Fill margarita glasses 3/4 of the way with still warm mash (microwave if necessary). Top with condiments and enjoy.
