Sweet Meatballs
2 eggs
3/4 cup dry breadcrumbs
2 OXO onion cubes
1/2 cup boiling water
1/2 tsp each salt and pepper
2 tbsp vegetable oil
1 (14-oz) can pineapple dessert bits
2 tbsp cornstarch
1/2 cup brown sugar
3 OXO beef cubes
(or 4 1/2 tsp OXO beef stock)
1 1/2 cups boiling water
1/2 cup white vinegar
1/2 cup ketchup
3/4 cup sweet gherkins, diced
1/2 green pepper, thinly sliced

1/2 red pepper, thinly sliced
lengthways
2 carrots, thinly sliced and cooked
Dissolve onion cubes in boiling water and combine with beef, eggs, breadcrumbs, salt and pepper. Shape into
1 1/4-inch balls. Brown meatballs in a pan with 2 tbsp of oil. Drain pineapple, reserving juice. Combine cornstarch, brown sugar and pineapple juice in saucepan. Dissolve beef cubes in boiling water and add to saucepan (or add beef stock). Add vinegar and ketchup; cook, stirring constantly until sauce is thick and bubbly. Reduce heat; gently stir in meatballs, pineapple, gherkins, peppers and carrots. Heat through. Serve with rice or alone as an appetizer. Makes 6-8 servings.
