Sweet and Spicy Nuts
2 1/2 tbsp brown sugar
1 tsp kosher salt (or other coarser type salt)
1/2 tsp cinnamon
1/4 tsp cayenne pepper
1/4 tsp ground cumin
1/2 an egg white
1 1/2 tsp water
8 oz pecan halves
Preheat oven to 300°F. Line baking sheet with parchment paper or grease well. In a medium bowl, mix sugars, salt and spices until well blended. In another small bowl, whisk egg white and water until white and frothy but not yet forming peaks. Toss nuts in egg white mixture and transfer to sugar bowl. Toss well to coat and spread evenly, in a single layer, on baking sheet. Bake 30 minutes, stirring at the halfway point, until puffed, crisp and fragrant. Let cool and before completely cool, break apart any nuts sticking together.
