Sub Sandwich

Difficulty: easy Prep Time: Five Minutes Total Time: 30 Minutes or Less
4 hotdog buns
1/2 cup mayonnaise/salad dressing
1 tbsp ketchup/BBQ sauce
4 slices Swiss cheese
8 slices sandwich meat (lean turkey/beef/ham/chicken)
12 thin slices of tomato
1 red pepper, julienned
1/2 romaine heart, chopped

Mix together the mayo and ketchup/BBQ sauce. Spread each bun with 2 tbsp of the mayo mixture. Divide all remaining ingredients into four portions; layer cheese, meat and veggies on the buns and close the sandwiches. Secure with a frilly toothpick, if desired, and cut in half. Yield: 8 mini subs.
