Stuffed Potatoes

2 large baking potatoes
½ cup non-fat plain yogurt
1 cup cooked turkey, chopped
½ cup onion, chopped
½ cup green pepper, chopped
¼ tsp ground black pepper
Cheese, shredded

Bake potatoes. Scoop out potato and mix together with yogurt, turkey, onion, green pepper and black pepper. Stuff back inside potato skins. Shred cheese over top, if desired. (Recipe submitted by Ann Bain of Tatamagouche, Nova Scotia.)
