Steamed Berry Pudding with Brown Sugar Sauce
1 egg
½ cup sugar
1 tsp baking powder
1 or 1 ¼ cup berries (may use marsh berries, blue berries, partridge berries etc.)
¼ cup butter
¼ cup milk
Sauce
2 Tbsp butter
2 Tbsp flour
½ cup brown sugar
1 cup boiling water
1 tsp vanilla
Rub sugar and butter together then mix in flour and baking powder then fold in berries. Mix egg and milk together and fold into dry ingredients and berries. Put into a pudding steamer and place into a pot with water and steam for 1 ½ hours.
You can serve with brown sugar sauce
Sauce
Melt butter in saucepan add in flour and mix until smooth then stir in brown sugar until bubbles and lightly brown remove from heat and add boiling water return to heat and stir until thickened remove from heat and add vanilla.
