Spicy Corn Relish

3 cups frozen corn kernels
1/2 cup each: green, red & orange peppers, diced small
1 cup red onion, diced small
3/4 cup tomato, diced small
2 cloves fresh garlic, minced
1 small jalapeno, minced
2 tsp dry chili flakes
2 tsp turmeric powder
1 tbsp kosher salt
1/2 tsp celery seed
1 1/2 tsp ground mustard
2 cups vinegar
1 cup white sugar
1/4 cup water
2 tbsp cornstarch
1/2 cup each: green, red & orange peppers, diced small

1 1/2 tsp ground mustard
2 cups vinegar
1 cup white sugar
1/4 cup water
2 tbsp cornstarch
Put everything except the water and cornstarch in a steel pot. Bring to a boil, stirring occasionally to be sure nothing sticks. Boil gently over medium-high heat for approximately 10 minutes. Mix the water and cornstarch together and add to the hot relish, stirring constantly. Bring back to a boil for 10-15 seconds. Remove from heat and cool before serving, stirring often. Yield: approximately 4-5 cups.
