Spiced Rice Pudding
2 cups whipping cream
1 cup milk
2 whole eggs
1 egg yolk
1/4 cup sugar
1/4 cup brown sugar
1 tsp vanilla
1/2 tsp salt
3/4 tsp cinnamon
1/8 tsp nutmeg
1/2 cup raisins
Preheat the oven to 325F. Cook the rice with the milk and cream over medium heat until the rice is about half done. Set aside. In a large bowl, whisk together eggs, yolk, sugars, vanilla, salt and spices. Slowly whisk the hot mixture into the egg mixture. Stir in the raisins. Return to the stove over low heat and stir constantly until the mixture just starts to thicken. Remove immediately and pour into a greased 9"x13" casserole dish. Cover with foil and bake for about 20-30 minutes. It should be a little jiggly/creamy, but not runny, and the rice should be cooked through. Serve warm. Yield: 6-8 servings
