Spiced Banana Fritters
2 tbsp milk
2 eggs
1 tbsp butter, melted
1 cup all-purpose flour
1 tbsp white sugar
2 tbsp brown sugar
1 1/4 tsp baking powder
1/2 tsp salt
1/2 tsp ground cinnamon
1/8 tsp ground nutmeg
Small pinch of ground cloves
Canola/vegetable oil for frying
1/2 cup confectioners' sugar for dusting
In a large bowl, mash the bananas. Mix in milk, eggs and melted butter until smooth. In a separate bowl, sift together flour, sugars, baking powder, salt and spices. Stir dry ingredients into banana mixture. Heat oil in a deep fryer to 375F. Drop batter by the spoonful into the hot oil and cook, turning only once, until browned, 5-7 minutes (if they brown too quickly, leaving the centre undercooked, then reduce the temperature of the oil to 350F). Drain on paper towels and dust with confectioners' sugar. Yield: 12 fritters.
