Smoked Cod
1 lemon, sliced thinly
1 cup shallots, sliced thinly
4 cloves garlic, sliced thinly
1 cup red pepper, sliced thinly
1 tbsp extra virgin olive oil
1 tbsp lemon juice
1/2 tsp celery salt
Place the cod fillets on a metal pan that will fit in your smoker. Top them with the lemon slices. Mix everything else together and top the fish (note: the fish will be virtually buried in vegetables). Place the pan in the smoker at 250F and allow it to smoke for 40-60 minutes. Check the fish after 40 minutes. If it's firm and starting to flake, it's done. If not, give it another few minutes to reach that point. Serve the fish immediately with the smoked vegetables as a side dish. (Note: you can use your favourite wood for smoking - we used Applewood.) Yield: 2-4 servings
