Smoked Cod Chowder
3 slices bacon, small dice
1/2 cup butter
3/4 cup carrot, small dice
3/4 cup celery, small dice
1 1/2 cups onion, small dice
1 bay leaf
3 tbsp flour
1/3 cup white wine
5 cups fish stock, warm
1 potato, unpeeled and diced
1 cup cream
Render fat from the bacon. Once it�s rendered, add butter. Add carrot, celery, onion and bay leaf and saut� until onion is translucent. Add flour and mix thoroughly. Stir in wine. Remove from heat and gradually stir in the warm stock and add the potatoes. Return to the heat and bring the soup to a simmer. When the potatoes are cooked, add the cream and reduce heat to low. Add smoked cod and cook for about 5 minutes. Season to taste. Makes 4 servings.
