Shrimp Salad

Difficulty: easy Prep Time: Five Minutes Total Time: More than 1 hour
2 cups cooked shrimp
1 cup mandarin oranges, drained
1 cup pineapple tidbits
1 small can water chestnuts
1 cup celery, diced
1 cup onion, sliced
1/3 cup cashew nuts
1/4 cup green pepper
1/4 cup flaked coconut
4 cups lettuce, shredded

Dressing:
3/4 cup sugar
1/3 cup vinegar
1 tsp salt
1 tsp dry mustard
1 tsp grated onion
1 cup salad oil
1 tsp celery seed

Combine all salad ingredients, except lettuce, in a bowl and leave refrigerated until needed. For dressing: Combine first 6 ingredients and beat with electric beater until thick. Stir in celery seed; mix. Refrigerate 2 hours minimum. Add lettuce and dressing to salad and serve immediately.
