Scallops With Basil Tomato Sauce

1 tbsp margarine or butter
3/4 cup chopped onions
1 tsp crushed garlic
3/4 cup diced sweet green or red pepper
3/4 cup sliced mushrooms
2 tsp all-purpose flour
1 cup 2% milk
2 tbsp tomato paste
1 1/4 tsp dried basil
1 lb scallops, sliced in half if large
1 tbsp grated Parmesan cheese

1 cup 2% milk
2 tbsp tomato paste
1 1/4 tsp dried basil
1 lb scallops, sliced in half if large
1 tbsp grated Parmesan cheese
In a large nonstick skillet, melt butter or margarine; saute onions, garlic, green pepper and mushrooms until softened, approx. 5 minutes. Stir in flour and cook for 1 minute, stirring.
Add milk, tomato paste and basil; cook, stirring continuously, until thickened, 2 to 3 minutes. Add scallops; cook just until opaque, 2 to 3 minutes. Place on serving dish and sprinkle with Parmesan cheese.
