Samosas
2 cups flour
1/4 cup vegetable oil
2 tbsp water
Filling:
2 tbsp olive oil
1 small onion, minced
5 garlic cloves, minced
1" piece of ginger, peeled & grated
2 tsp garam masala
1/2 tsp turmeric
1/2 tsp chili flakes
2 tbsp lemon juice
1 tbsp parsley, chopped (dry is fine too)
3/4 tsp salt
1/2 tsp black pepper
3 potatoes, boiled & mashed
1/2 cup green peas
For the pastry: Mix together flour, oil and one tablespoon of water. Work together until you get a soft, pliable dough reminiscent of play dough, but elastic. Add the other tablespoon (or more) of water if necessary. Set dough aside to relax while you make the filling. For the filling: Heat oil over medium-high heat and sauté onion, garlic, ginger, garam masala, turmeric and chili flakes until the onions are softened. Mix in lemon juice, parsley and seasonings. Add potatoes and mix well. Fold in green peas. Roll out the dough to 1/8" thick and cut out circles about 5" round. Place some filling in the centre of the circle, and moisten the edges with a little water. Fold over like an apple flip and seal the edges by pressing with a fork. Fry in oil heated to 350°F until golden brown and a little puffed. Serve with your favourite condiments. Yield: approx. 36
