Salted Caramel Banana Bread

2 eggs, beaten
1/3 cup buttermilk
1/2 cup vegetable oil
3 medium bananas, mashed
1 1/2 cups white sugar
1 3/4 cups all-purpose flour
1 tsp baking soda
1/2 tsp salt

Glaze
2 tbsp unsalted butter
1/4 cup packed light brown sugar
2 tsp whipping cream
1/3 cup powdered sugar
1/4 tsp salt

Preheat oven to 325F. Spray 4 mini loaf pans with non-stick spray coating. Blend together eggs, buttermilk, oil and bananas. Sift together the sugar, flour, baking soda and salt. Add to banana mixture. Mix well. Pour into prepared loaf pans and bake 45 minutes or until a toothpick inserted in the centre comes out clean. In small saucepan, heat 2 tablespoons butter and brown sugar to boiling over medium heat, stirring constantly with whisk. Boil and stir 1 minute. Stir in whipping cream. Remove from heat, and stir in powdered sugar and salt. ­Immediately drizzle over loaves (glaze will harden quickly).
