Salsa Breaded Chicken Casserole

2 boneless skinless chicken breasts, cubed
1 pkg Stove Top chicken stuffing mix
1/2 pint cherry tomatoes
1 small bottle (473 ml) mild salsa
1 tsp dried basil
3/4 cup light shredded cheese (double cheddar/tex-mex/mozzarella)

Cut tomatoes in half and place in a microwave-safe dish. Microwave on high for 2 minutes. In a bowl combine tomatoes and salsa. Add stuffing mix and fold in until stuffing is wet. Place chicken in the bottom of an ungreased 2L casserole dish. Sprinkle with basil and cheese. Top with stuffing mixture. Bake uncovered at 400F for 30-40 min. or until chicken is cooked through and topping is beginning to crisp. Makes 4 servings.
