Salmon Teriyaki with Noodles
1 red pepper, deseeded and finely sliced
1 yellow pepper, deseeded and finely sliced
3⁄4-inch piece fresh ginger root, peeled and sliced
1⁄2 cup teriyaki marinade
1 (250 g) pkg medium egg noodles
Place salmon, peppers, ginger and marinade in a shallow dish. Heat a large frying pan, remove salmon fillets from marinade and cook for about 7 minutes on each side, or until cooked through. Add peppers after 3-4 minutes. Place egg noodles in a large saucepan of boiling water, bring to a boil and cook for 4 minutes, drain and keep warm. When the salmon is almost cooked, add the remaining marinade and heat through. Remove fish from the pan, and stir peppers and marinade into noodles. Divide noodles between 4 plates, and place salmon on top.
