Ritz-Pecan Tortes

3 egg whites
1/4 tsp cream of tartar
1 cup sugar
1/2 tsp vanilla
3/4 cups chopped pecans
20 Ritz Crackers, finely crushed
1/2 pint whipping cream
1/4 tsp cream of tartar

Preheat oven to 325°F. Beat egg whites and cream of tartar until stiff. Fold in sugar, vanilla, pecans and Ritz Cracker crumbs. Grease well, two 9" round cake pans, fill with egg white mixture. Bake for 30 minutes at 325°F. Cool for 15 minutes. Remove from pans. Whip cream until stiff. Spread between two layers and refrigerate for 24 hours. Top with additional whipped cream.
