Rainbow Chicken Salad

Difficulty: easy Prep Time: Five Minutes Total Time: 30 Minutes or Less
2 cups Bistro rainbows (pasta)
2 cups cooked chicken, cubed
1 small red onion
3 green onions
2 cloves garlic
2 tsp Dijon mustard
1/2 tsp salt
2 tbsp red wine vinegar
1/4 cup olive oil
1/3 cup parmesan cheese

Boil rainbows; drain excess water and cool. Add chicken, red and green onions. In a small bowl, combine garlic, mustard, salt, vinegar and oil. Pour over salad and toss gently. Let chill for 2 hours. Top with cheese.
