Quick Lamb Biryani

Difficulty: easy Prep Time: Five Minutes Total Time: 30 Minutes or Less
1 large onion, sliced
1 tbsp red curry paste
2 large tomatoes, diced
1 lb lamb leg, cubed
1 green pepper, diced

Cook onion in a small amount of olive oil until golden brown. Add curry paste, tomatoes and lamb. Cook until lamb is evenly browned. Add green pepper and cook briefly (1-2 min.). Cook until lamb is tender, adding a
little water if the pan gets too dry. Serve over rice. Serves 4
