Quesadilla on the Go
2 tbsp butter
4 button mushrooms, sliced thinly
2 tbsp white onion, minced
1 sausage patty, cooked and
diced small
2 sundried tomatoes, minced
1 green onion, sliced
1 tbsp fresh parsley, chopped
1/2 tsp salt
1/4 tsp black pepper
1/2 cup old cheddar, grated
Add butter to a large frying pan heated over medium-high heat. Sauté mushrooms until soft. Add onion and cook until translucent. Add remaining ingredients (except cheese) and toss to coat in butter and heat through. Remove from heat and set aside in a bowl.
Turn off the burner under the frying pan and lay the tortilla in the pan to warm it. Lay half the cheese over one half of the tortilla, then cover the cheese with hot filling and top with remaining cheese. Fold the other half of the tortilla over and press down.
Turn the burner back to medium and allow the tortilla to brown. Flip it over carefully and allow the second side to brown. Remove from heat and set on a cutting board to rest for about five minutes before cutting into wedges. Serve with sour cream.
Yield: 1 serving
