Pumpkin Chocolate Chip Loaf
1/4 cup water
1 cup sugar
3/4 cup extra virgin olive oil
3 eggs
1 1/2 cups flour
1 tsp salt
1 tsp baking soda
1 cup semisweet chocolate chips
Preheat oven to 350F. Grease a 9" x 7" x 3" loaf pan and line the bottom with parchment paper. In a measuring cup, incorporate water fully into pumpkin pie filling. In a large bowl, and using a wooden spoon, beat together the pumpkin pie filling, sugar and oil. Beat in the eggs one at a time, making sure each one is fully incorporated before adding the next. In another bowl, combine flour, salt and baking soda. Carefully stir the flour mixture into the pumpkin mixture. Fold in chocolate chips. Pour batter into loaf pan and bake for 1 hour. Loaf is done when a tester inserted in the centre comes out clean.
