Potato Skins

Difficulty: easy Prep Time: Fifteen Minutes Total Time: Under an hour
4 large potatoes, washed
12 slices bacon, fried crisp and crumbled
1 green pepper, finely diced
1 cup cheddar cheese, shredded
BBQ sauce or sour cream for dipping

Parboil potatoes. Cut slices off the potato about 1/4” thick all the way around. Carefully scoop out potato, leaving about 1/4" of potato on the skins and deep-fry at about 325°F until golden. Drain. Top with bacon, green pepper and cheese, and bake for 5-8 minutes at 375°F until cheese is melted. Serve with BBQ sauce or sour cream for dipping. Serves 4.
