Potato Croquettes

4 cups mashed potatoes
1 tbsp cornstarch
1/2 tsp salt
1/4 tsp black pepper
2 egg yolks
2 tbsp milk
1/8 tsp ground nutmeg
Flour (enough for dredging)
Egg wash (2 eggs and 1/2 cup milk, beaten together)
1 cup dry bread crumbs

Egg wash (2 eggs and 1/2 cup milk, beaten together)
1 cup dry bread crumbs
Mix together first 7 ingredients and allow to cool. Form into balls or logs and dredge in flour. Shake off excess flour and dip in egg wash, ensuring all the flour is covered. Roll in bread crumbs. Deep-fry at 325°F until dark golden brown and heated all the way through.
