Potato Crisps

Difficulty: easy Prep Time: Five Minutes Total Time: 30 Minutes or Less
2 lbs potatoes
1/2 cup onions, minced
1/4 cup all-purpose flower
1 tbsp baking powder
1/2 tsp salt
1/4 tsp black pepper
1/4 tsp nutmeg
2 beaten eggs
1/4 vegetable oil for frying

(May be prepared ahead of time and reheated to serve.)

Peel and grate potatoes.

Mix together onion and potatoes.

Mix together flour, baking powder, salt, pepper and nutmeg. Stir into potato/onion mixture. Add beaten egg and mince well.

Heat frying pan over medium heat. Add 1 tbsp (15 ml) vegetable oil. Drop heaping spoonfuls of potato mixture onto hot pan and flatten with back of spoon. Fry 1 2 minutes per side until browned.

Remove potato crisps to paper towel to drain. Add more oil to pan and continue frying crisps until all the batter is cooked.

Reheat when ready to serve.

Yield: 16 14 3-inch crisps.
