1 can (8 1/2 oz) crushed pineapple well-drained
1 cup chopped pecans or walnuts
1/4 cup finely chopped green pepper
2 tablespoons finely chopped onion
1/2-1 tablespoon seasoned salt
Beat cheese until smooth. Gradually stir in pineapple, 1/2 cup nuts, onion, green pepper and seasoned salt. Mix well and form into ball on Saran Wrap. Sprinkle with remaining nuts. Refrigerate overnight. Makes 1 large or 2 small cheese balls. Freezes well (seems a bit messy at first but firms up after refrigerated). Serve with crackers.
