Pickled Mushrooms
1 cup white wine vinegar
1/2 cup water
1/2 tsp dry chili flakes
4 cloves garlic, sliced
1/2 tsp salt
1/4 cup black pepper
1/2 cup red onion, sliced
2 (4-inch) sprigs fresh thyme
In a saucepan, mix together mushrooms, vinegar, water, chili flakes, garlic, salt and pepper. Bring the mixture to a boil and allow to simmer for 5 minutes. Remove from heat. Add onion and thyme. Pour the mixture into a quart-sized jar. Allow to cool uncovered. Once cool, cover and place in the fridge. Yield: nearly a quart.
*Note: This is not “proper†preservation and will not suffice for long-term storage. Best stored in the fridge and consumed within a week.
