Peach Cobbler
1/4 cup white sugar
2 tsp ground cinnamon (optional)
1 (9 oz) package yellow cake mix
4 tsp margarine
Discard 1/2 of the juice from canned peaches and pour peaches with the remaining juice into a large saucepan. Sprinkle with sugar and cinnamon. Cover with cake mix in an even layer. Place margarine on top in the centre Cover the saucepan with a lid and bring to a simmer over medium- high heat. Once you see steam escaping the saucepan, reduce heat to medium-low, and continue cooking for 10 minutes; do not lift the lid during this time. Remove from heat and allow to stand with the lid on for 15 minutes. Yields six servings.
